Pinot Gris Rose
Colour: Exceptionally bright iridescent copper with shimmering
Aroma: Intense and complex with red apple skin, white blossom,
strawberry, rose petal, Turkish delight and a hint of struck match.
Palate: Dry yet textural with red apple, nashi pear and a touch of
flint, great acid drive and wonderful length and freshness.

Production: 136 Cases
Vinification: Two day cold soak, followed by wild fermentation with
5 days on skins and gentle punch-downs once a day to extract the amazing
bronze/copper colour from the skins as well as the red apple and pear
aromatics without extracting too much tannin, before being pressed off
into barrel for the remaining 23 days of fermentation with lees stirring
twice weekly to increase complexity and mouthfeel.
Maturation: Lees stirring continued twice weekly on full solids for
another two months to give a creaminess to balance the acid on the palate.
The wine was then immediately racked and bottled to retain freshness.
Gorgeous copper pink colour. Subtle perfume of red berry and pears
with whiffs of nougat or similar. Palate is textural, chewy, lovely and
long. Skinsy grip a wonderful feature and the finish is bright, a
starburst of tart and tangy. Subtle and beautiful flavours here.
